I like eating seasonally. This means I try to eat whatever is being harvested near me. Super fresh and oh so tasty. Found this lovely cauliflower on sale.
Cauliflower Salad
1 head cauliflower (about 4c)
1 mango (about 1c)
1/2c red onion
1 avocado
1 roma tomato
1/2c cashews
1/2c cilantro
1 lime, juice
zest one lime
1/2t salt (optional)
Cut everything into bite size pieces, toss together, and serve as a side salad or on a tostada.
Adapt this recipe to suit your tastes. If you like more tomato, use more tomato. If you don’t like cilantro, you could use parsley. Depending on the size of the cauliflower, I adjust this recipe up and down.
